Ingredients for keto ice cream:
- 2 cups coconut milk (full-fat canned variety)
- 1/3 cup erythritol or other sweetener of your choice
- 1/8 tsp salt
- 1 ½ tsp vanilla extract or bean paste
- Additional flavours according to preference.
Method:
- Begin making your keto ice cream by mixing the milk, salt, sweetener and vanilla together.
- If you have an ice cream machine, you need only churn the mixture according to the instructions.
- If you don’t have an ice cream maker, you can freeze the mixture using ice cube trays. Once frozen, you can blend the cubes using a high-speed blender or you can thaw them slightly and use a regular blender or food processor.
- You can eat your ice cream as is or you can freeze it for about an hour for a firmer texture.
- This keto ice cream is best enjoyed on the same day but it can be stored in the freezer for up to one month.
- If you store your ice cream for a few days or weeks, you should allow it to thaw slightly before serving.
This recipe can be adjusted to make various flavours such as chocolate, mint, lemon, strawberry or any other fresh fruit flavour you prefer. If you can find the essences, you can make the flavour!
