If you love sweet treats but you don’t like all the guilt that goes along with it, then you will love this delicious sticky toffee pudding recipe! While you will still get to enjoy all the delicious sweetness, a few ingredients have been altered to ensure a lower calorie count.
Ingredients:
- 175g dried dates (pitted)
- 150ml maple syrup
- 2 large eggs (separated)
- 1 Tbsp vanilla extract
- 85g self-raising flour
- 0% Greek yogurt and maple syrup to serve (optional)
Directions:
- Before you begin mixing any ingredients for your sticky toffee pudding, you should preheat your oven to 160C.
- Place the dates in 175ml water in a pan and allow to simmer for 5 minutes.
- Place the dates and water into your food processor along with 6 tablespoons of maple syrup and 1 tablespoon of vanilla extract. Blend until the mixture is smooth.
- Transfer the mixture to a bowl and add the egg yolks.
- Now mix in the flour.
- In a separate bowl, beat the egg whites until they are stiff.
- Fold the egg whites into the sticky toffee pudding mixture.
- Put 1 tablespoon of maple syrup into a 200ml pudding mould. You will need four of these moulds for the total quantity of your pudding mixture.
- Add the mixture on top of the maple syrup.
- Cover each mould with foil and place in an ovenproof dish.
- Add hot water to the ovenproof dish until it reaches halfway up the sides of the moulds.
- Bake in your oven for 1 hour or until the skewer test comes out clean.
- Uncover and loosen by running a knife around the edges.
- Invert onto plates.
- Drizzle some maple syrup and yogurt over the top if desired and enjoy!
