When you think about ice cream flavours, you most likely imagine chocolate, vanilla and strawberry. Not very many people think about rose water ice cream. If you have ever tried rose jam, you will know just how delicious these petals can be. Here is an easy recipe to make your own rose water ice cream at home.
Ingredients:
- 1 cup milk
- 3 cups heavy cream
- ½ – ¾ cup sugar
- 3 egg yolks
- 2 – 3 Tbsp rose water
Method:
- In a medium saucepan, combine the milk, cream and sugar.
- Place over a medium-low heat and stir occasionally until the sugar dissolves.
- The mixture should get hot but not boil.
- Remove from heat
- Whisk the egg yolks together in a bowl and slowly add about a cup of the hot mixture to the egg yolks to temper them.
- Now add the tempered egg mixture to the saucepan and return the pan to the stove.
- Again on medium-low heat, stir the mixture constantly until it thickens. This usually takes about 10 minutes.
- Remove from heat, stir in the rose water and taste as you go. Add the rose water bit by bit until you achieve the desired flavour.
- Remember, even if it tastes really sweet now, it will not taste as sweet once frozen. If you enjoy sweeter varieties of ice cream, you might want to use more sugar than the recipe states.
- Strain the mixture into a bowl and chill it (do not freeze).
- Process the mixture in your ice cream maker and freeze until solid before you enjoy.
