Ingredients for pansy cookies:

  • 4 cups flour (sifted)
  • ½ tsp salt
  • 1 tsp baking powder
  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 2 eggs (lightly beaten)
  • 2 tsp vanilla extract
  • 1 egg white
  • 3 dozen edible pansies (trimmed stems)
  • ½ cup sugar

Directions:

  • Line 2 baking sheets with parchment paper.
  • Sift together the flour, salt and baking powder into a large bowl and set aside.
  • In another bowl, use your mixer fitted with paddles, cream the butter and gradually add the sugar. Beat until fluffy.
  • Add eggs gradually to this mixture and beat until fluffy.
  • On low speed, add vanilla and the dry ingredients.
  • Mix until combined.
  • Divide the dough into two balls and wrap in plastic,
  • Flatten into discs and refrigerate for 30 minutes
  • Preheat your oven to 325 degrees F.
  • Whisk the egg white and 1 tablespoon of water together in a small bowl until frothy.
  • Roll out one ball of dough on a lightly floured surface (¼ inch thickness).
  • Cut out your cookies and place them on the baking sheets. Make sure that they are large enough for the pansies to fit on top.
  • Brush each cookie with the egg wash.
  • Place a pansy on each cookie.
  • Apply more egg wash to fix the petals in place.
  • Sprinkle sugar over the top,
  • Bake your pansy cookies until they are lightly browned (about 10 minutes.)
  • Repeat this with the remaining ingredients to make a complete batch.
