Ingredients for pansy cookies:
- 4 cups flour (sifted)
- ½ tsp salt
- 1 tsp baking powder
- 1 cup unsalted butter
- 2 cups granulated sugar
- 2 eggs (lightly beaten)
- 2 tsp vanilla extract
- 1 egg white
- 3 dozen edible pansies (trimmed stems)
- ½ cup sugar
Directions:
- Line 2 baking sheets with parchment paper.
- Sift together the flour, salt and baking powder into a large bowl and set aside.
- In another bowl, use your mixer fitted with paddles, cream the butter and gradually add the sugar. Beat until fluffy.
- Add eggs gradually to this mixture and beat until fluffy.
- On low speed, add vanilla and the dry ingredients.
- Mix until combined.
- Divide the dough into two balls and wrap in plastic,
- Flatten into discs and refrigerate for 30 minutes
- Preheat your oven to 325 degrees F.
- Whisk the egg white and 1 tablespoon of water together in a small bowl until frothy.
- Roll out one ball of dough on a lightly floured surface (¼ inch thickness).
- Cut out your cookies and place them on the baking sheets. Make sure that they are large enough for the pansies to fit on top.
- Brush each cookie with the egg wash.
- Place a pansy on each cookie.
- Apply more egg wash to fix the petals in place.
- Sprinkle sugar over the top,
- Bake your pansy cookies until they are lightly browned (about 10 minutes.)
- Repeat this with the remaining ingredients to make a complete batch.
