Pamper mum with the most delicious Mother’s Day cupcakes she has ever tasted. Below you will find an easy recipe for scrumptious lemon and poppy seed cupcakes just for her. Of course, you might want to make a double batch so that everyone can enjoy them together!

Ingredients for Mother’s Day cupcakes:

  • 225g self-raising flour
  • 175g caster sugar
  • 1 Tbsp poppy seeds (toasted)
  • Zest from 2 lemons
  • 3 eggs
  • 100g natural yogurt
  • 175g butter (melted and cooled a little)

Ingredients for the icing:

  • 225g butter (softened)
  • 400g icing sugar (sifted)
  • Juice of 1 lemon
  • A few drops of yellow food colouring
  • Decorations (sprinkles, icing flowers, etc)

Directions:

  • Heat your oven to 180C (160C for ovens with a fan or set your gas oven to 4).
  • Line a muffin or cupcake tin with 12 holes. This recipe makes 12 Mother’s Day cupcakes so, if you want to make more, you will need to line an additional cupcake tin.
  • Mix the flour, lemon zest, sugar and poppy seeds in a mixing bowl.
  • Beat the eggs into the yogurt before combining with the dry ingredients.
  • Add the melted butter and mix well with a whisk or wooden spoon until there are no lumps.
  • Divide the mixture into the 12 holes.
  • Bake for approximately 20 minutes and use a toothpick to test if they are baked all the way through.
  • Allow to cool for a few minutes in the tin before moving them to a cooling rack.
  • While cooling, you can make the icing. Start by beating the softened butter in a large bowl.
  • Slowly add the icing sugar and the lemon juice.
  • Add food colouring to create a pale lemon colour.
  • Once ready, place the icing into a piping bag with a large star nozzle.
  • When piping each cupcake, you want to begin with the exterior and work your way in to the middle. Pipe one ring around the outer rim before piping the next one inside and continuing this way until the whole cupcake is covered.
  • Top with sugar decorations as desired.

Arrange a few of these cupcakes on a cupcake stand or decorative plate. Attach a card with a special message to your cupcake stand or plate. When you present mum with her very special Mother’s Day cupcake, you can also present her with any other gifts such as balloons, cards or flowers, for example.
