Ingredients:
- 1 ¾ cups oat flour (can substitute with rolled oats)
- ¼ cup coconut flour (or extra oat flour)
- 2 Tbsp granulated sweetener
- 1 Tbsp pumpkin pie spice (or mix cinnamon, nutmeg, allspice and a touch of ginger)
- ½ cup pumpkin puree
- 1 tsp vanilla essence
- ¼ cup nut butter
- ¼ cup brown rice syrup or other sticky sweetner
- 1 Tbsp milk
- Cinnamon and granulated sweetener mixed for coating your pumpkin bites
Directions:
- Combine the flour, sweetener and pumpkin pie spice in a large bowl and mix well.
- Heat (in the microwave or on the stove) the nut butter and sticky sweetener until combined.
- Add the vanilla to this mixture and pour this mixture into the dry mixture. Mix well.
- Feel the consistency of the mixture. If it is very dry, you can add some milk. If it is too moist, add some of the extra flour. You need to achieve a firm texture.
- Roll small amounts to make bite size balls. These are pumpkin bites afterall!
- Now roll them in some cinnamon and sweetener before placing on a baking tray or plate and refrigerate for at least 10 mintes to let them firm up.
