There is something about fruit and sponge cake that just seems to make your mouth water. They work so well together and they get better when you include fresh cream or ice cream too! Here is an easy fruity sponge pudding recipe that allows you great flexibility since you can use just about any type of fruit.

Ingredients:

  • 3 cups fruit (canned or fresh)
  • 80g butter, softened
  • ½ cup sugar
  • 1 egg
  • ½ cup milk
  • ½ tsp vanilla
  • 1 cup self-rising flour
  • ½ tsp baking powder
  • Cream or ice cream to top your sponge pudding

Directions

  • To begin, you need to preheat your oven to 180C.
  • Cut and arrange your fruit in a 1 ½ litre ovenproof dish.
  • Cream together the sugar and butter until light and fluffy.
  • Beat in the vanilla and egg.
  • Now stir through the flour, baking powder followed by the milk.
  • Spoon this mixture on top of the fruit and spread it around evenly.
  • Bake for 25 – 30 minutes until golden and your sponge pudding has risen nicely. You can use a toothpick to test the middle of the pudding. If it comes out clean, your sponge cake is cooked all the way through.
  • Serve as is or top with whipped cream or vanilla ice cream. Remember, this pudding is best served warm!
