The holidays are fast approaching and it’s time to start planning your festive meals. Panettone is a popular treat around this time of year but not everyone can or wants to make the full-sized version. So, instead, why not try making these panettone muffins?

Ingredients for panettone muffns:

  • 250g flour
  • 7g dried yeast
  • 100ml milk (warm)
  • 3 eggs
  • 1 tsp vanilla
  • 50g caster sugar and extra for dusting
  • 100g butter (softened)
  • 1 orange (zested)
  • 100g raisins
  • 100g sultanas
  • 100g mixed peel

How to make panettone muffins:

  • Mix together the flour, yeast, milk and a pinch of salt using your mixer with a dough hook.
  • Mix in two of the eggs and vanilla.
  • Knead until smooth and springy.
  • Cover and allow to rise for at least 2 hours (until doubled in size).
  • Place the dough in a mixing bowl again and add the sugar, butter and the yolk from the remaining egg.
  • Mix and knead until the dough is smooth again.
  • Add the fruit and knead quickly.
  • Cover and allow to rise somewhere cool so that the butter does not melt out of the dough. Allow to double in size (approximately 2 hours).
  • Line a muffin tin (with six holes) with paper cases.
  • Divide the dough into six equal portions and roll them into balls.
  • Place a ball in each paper case.
  • Cover the tine with a tea towel and allow the dough to rise again (about 20 minutes).
  • Heat your oven to 180C, brush the tops of the muffins with egg white before dusting with caster sugar.
  • Bake for 15 to 20 minutes or until the panettone muffins have risen and are golden brown.
  • Allow to cool on a wire rack before serving.

This recipe is easy to follow and you can keep them for up to three days in an airtight container. Panettone muffins are excellent for convenience and they make it so much easier to serve your younger family members too.
