Christmas fruit chutney ingredients:
- 1kg cooking apples
- 500g eating apples
- 450g onion
- 50g fresh ginger
- 1 tsp peppercorns
- 500g sugar
- 250ml cider vinegar
- 500g cranberries
How to make Christmas fruit chutney:
- Start by peeling all of your apples and chopping them into small chunks.
- Now peel and slice your onions.
- The ginger root will need to be finely chopped too.
- Add all of the prepared ingredients (except the cranberries) to a large pot and heat gently while stirring constantly until the sugar dissolves.
- Bright to the boil before reducing the heat and allowing to simmer, uncovered, for approximately 50 minutes.
- Stir regularly until the apples and onions are tender.
- Once the mixture has thickened and there is no more watery juice, you can add the cranberries.
- Cook for another 10 minutes. Make sure not to overcook or they will burst.
- Spoon your Christmas fruit chutney into sterilised jars while the mixture is hot.
- Seal the jars and store in a dark, cool place for up to 6 months.
- Remember to refrigerate the chutney after opening the jar.
