Autumn is here and those cooler weather comfort foods are becoming that much more appealing. When temperatures drop, we naturally crave certain foods and this delicious brandy pudding recipe will definitely satisfy many, if not all, of these cravings! The best part of all is that this recipe is super simple and you’ll love serving it to your family as well as guests.

You will need:

  • 250g stoned dates finely chopped
  • 125g butter and extra for greasing
  • 85g light muscovado sugar
  • 140g self-raising flour
  • 50g raisins
  • 1 tsp baking powder
  • 2 large eggs
  • 50g chopped candied peel
  • 100ml brandy
  • 50g pecans (chopped)
  • 100g caster sugar
  • 50g dark cherries (glazed)
  • Butterscotch sauce (for serving)

Instructions:

  • To begin making this delicious brandy pudding, you need to preheat your oven to 180C.
  • Place the dates along with 250ml of boiling water together in a bowl and set aside.
  • Butter a 1.5L pudding dish and place baking parchment at the bottom of the dish.
  • Beat the butter, flour, sugar, eggs, and baking powder together in a bowl.
  • Add the cooled dates and water to the flour mixture and beat until the batter is soft and completely mixed.
  • Add the fruits and pecans to the mixture. You can add ginger too if you like.
  • Pour this mixture into the pudding bowl and cover with pleated baking paper and foil.
  • Now, you will need to place the bowl into a roasting tin which is half-filled with boiling hot water.
  • Steam in your oven for about 4 hours or until the pudding is done. To test if your brandy pudding is ready, use a skewer to test the middle. If it comes out clean, it’s ready.
  • While in the oven, make brandy syrup by mixing the sugar with 75ml of water in a pan. Heat and stir to create syrup.
  • Now add the brandy, stir and remove from heat.
  • When the pudding is ready, remove it from the oven and take the top foil and paper off.
  • Pour the brandy syrup over the pudding while your pudding is still hot. This ensures that the pudding soaks up all that delicious brandy syrup.
  • Cover the pudding until it’s time to serve. You can refrigerate the pudding and you can reheat each portion when serving.
  • Pour butterscotch sauce over the top when serving.
