Fresh fruit is a delicious and nutritious treat. Of course, when you are looking for something a bit more comforting, you might like baked fruit instead. This recipe is great for cooking a variety of fruit and not letting a large quantity of fruit go to waste.
Ingredients:
- 16 ounces apricot halves
- 16 ounces pear halves
- 30 ounces plums (halved)
- 29 ounces peach halves
- 8 ounces pineapple slices (canned is best for baked fruit as you need the juice)
- 1/3 cup brown sugar
- 1 tablespoon butter
- ½ teaspoon cinnamon (ground)
- ¼ teaspoon cloves (ground)
Method:
- Grease a 13 x 19 inch baking pan.
- Preheat your oven to 350 degrees F.
- Start on the one end of the pan and arrange rows of fruit following a specific order. You will need to arrange half of the fruit on one side and then repeat with the other half on the other side of the pan. Start with apricots, then pears and plums. Add all of the peaches in the middle followed by the rest of the plums, pears and apricots.
- Drain the can of pineapple and save half a cup of juice.
- Lay the pineapple over the fruit in the pan.
- In a saucepan, combine this juice with the butter, sugar, cinnamon and cloves. Cook and stir until the sugar has dissolved and the butter has melted.
- Pour this mixture over the fruit.
- Bake uncovered for 20 – 25 minutes or until heated all the way through.
- Serve warm
