- There are only 6 dairies worldwide that are licensed to produce Blue Stilton cheese
- This cheese name is protected by law and there are only three counties in which it can be made. Namely, Leicestershire, Derbyshire, and Nottinghamshire.
- For 8kg of Stilton cheese, 78 litres of milk is needed. Which gives you and idea of just how much goes into every bite!
- This cheese gets its name from the Cambridgeshire village of the same name. Here, the cheese was first pressed, cooked, and sold for the very first time. The earliest varieties were in fact more like cream cheese but, over time, it became a semi-hard cheese.
- More than 1 million Stilton cheeses are made every year.
- Over 10% of the output is exported to about 40 countries around the world.
- Each cheese is graded prior to leaving the dairy. This is done to ensure that only the highest quality cheese is marketed under the famous Stilton name.
- Stilton is made in a similar manner to that of other blue cheese. However, no mould spores are added. The cheese is also sold once it reaches the 4 week mark. It is known for its creamy yet crumbly texture.
