Mother’s Day should be all about spoiling mum and not allowing her to lift a finger for the entire day. Apart from taking care of all the chores and showering mum with love and gifts, you should also prepare something extra special. Here is an easy recipe for delicious creamy crepes that she will love!
Ingredients:

  • 3 eggs
  • ½ cup milk
  • ½ cup water
  • 3 Tbsp butter (melted)
  • ¾ cup flour
  • ½ tsp salt
  • 8 oz cream cheese (softened)
  • 1 ¼ cups confectioners’ sugar (sifted)
  • 1 Tbsp lemon juice
  • ½ tsplemon zest
  • ½ tsp vanilla extract
  • 1 cup heavy cream (whipped)
  • 4 cups strawberries (sliced)

Directions:

  • In a blender, place the milk, eggs, water, butter, salt, and flour.
  • Blend these ingredients until smooth.
  • Use a mixer to blend the sugar, cream cheese, lemon zest, lemon juice, and vanilla. Mix until smooth.
  • Fold the whipped cream into the sugar and cream cheese mixture.
  • Heat a pan and add just enough oil to prevent sticking. If you are using a non-stick pan, this is not necessary. Pour the batter (the egg and flour mixture) into the pan. You will need about two tablespoons of batter for each crepe.
  • Spread the batter by tipping and rotating the pan. Once the batter has set and the edges of the crepe start to brown, it’s time to flip!
  • Cook the other side until it starts to brown. Stack the cooked crepes on a plate and cover with a damp towel to keep them soft.
  • When serving each crepe, you will need to fill it with ¼ cup sliced strawberries as well as 1/3 cup of the filling made with cream cheese.
  • Garnish with some melted chocolate if you like. Alternatively, you can also garnish with strawberries.
