While many people usually associate dessert with chocolate, caramel, and similar flavours, there are also plenty of easy fruit desserts too. Not only are these recipes extremely easy, but they are also delicious and healthier than sugar-rich options. Here are some simple and scrumptious recipes.
Broiled Pineapples with Vanilla Ice Cream
Ingredients:
- Cooking spray
- Fresh pineapples (3.5 pounds)
- Vanilla ice cream
Directions:
- Preheat the broiler and set the rack about 6 inches from the heat.
- Coat the broiler pan with some cooking spray.
- Core and clean the pineapples before cutting into wedges (like potato wedges).
- Place the pineapple wedges on the pan and cook for about 20 to 25 minutes (turning halfway through).
- Serve with vanilla ice cream.
Mango-Lime Ricotta Parfait
Ingredients:
- 2 mangoes (peeled, pitted, cubed)
- 1 Tbsp sugar
- ½ tsp grated lime zest
- 1 Tbsp fresh lime juice
- 1 ½ cups ricotta
Directions:
- Mix all the ingredients, EXCEPT the ricotta, in a large bowl. Gently toss them around.
- Allow to stand for 20 minutes.
- Place a few spoons of ricotta in a bowl or even a whisky glass.
- Top with the mango mixture and enjoy!
Bananas Foster
Ingredients:
- 3 bananas (peeled, halved, and halved lengthwise)
- 2 Tbsp butter
- ½ cup dark-brown sugar
- ¼ cup gold or dark rum
- Vanilla ice cream
Directions:
- Set your ice cream aside to soften. Since the bananas have a soft texture, you want the ice cream to also have a softer texture rather than frozen solid.
- In a skillet, heat the butter, sugar, and rum.
- Cook until bubbly and smooth (4 – 6 minutes).
- Add the bananas to the bubbling sauce and cook to warm the bananas all the way through (1 – 2 minutes). Swirl the pan to keep the sauce moving over and around the bananas.
- Place a couple of scoops of ice cream into each bowl and then top with a couple of bananas and some sauce in each.
