Just because your Valentine is a diabetic does not mean that they cannot enjoy dessert. Chocolate desserts are a favourite for this occasion but it’s important to limit the amount of sugar and carbohydrates if you want a recipe to be suitable for diabetics. Remember, carbohydrates turn into sugar which is why it’s so important to keep it to a minimum.
Chocolate Cinnamon Pudding
Ingredients:

  • 3 Tbsp cornstarch
  • 3 Tsp unsweetened cocoa powder
  • ¼ tsp salt
  • ½ cup evaporated skim milk
  • 6 Tbsp brown sugar
  • ½ tsp ground cinnamon
  • 2 ½ cups skim milk
  • 4oz bittersweet chocolate
  • chocolate shavings for garnish (optional)

Instructions:

  • Whisk together the cornstarch, cocoa powder, sugar, cinnamon, and salt in a saucepan.
  • Add the skim milk and evaporated milk and bring to a boil over a medium-high heat.
  • Whisk constantly while boiling and cook until thickened. This usually takes about one minute.
  • Whisk in the chocolate and cook until all ingredients are blended.
  • Divide this mixture into 6 cups (4 ounces each).
  • Place plastic wrap on top of each cup and make sure that the plastic touches the pudding itself. This is to prevent a “skin” from forming on top.
  • Refrigerate for at least an hour or even overnight.
  • Garnish with some chocolate shavings and serve!

Another important point to remember is that a diabetic diet is not only about dessert. If you want your Valentine to be able to enjoy this sweet treat, you will need to make sure that you keep the carbs to a minimum in your other meals. I low carb starte and main course is, therefore, essential.
