If you want to make a delicious chocolate cake for Valentine’s Day but you’re not all that great when it comes to baking, you will love this easy recipe!
Ingredients:
Cake base:
- 75g dark chocolate
- 1Tbsp golden syrup
- 50g unsalted butter
- 50g toasted hazelnuts
- 200g digestives
Cake filling:
- 175g dark chocolate
- 100g milk chocolate
- 75ml double cream
- 4 eggs (separated)
- 40g caster sugar
Cake topping
- 200ml whipping cream (softly whipped)
- Grated dark chocolate for decorating
Instructions:
- Lightly grease and line a 21cm cake tin (one with a springclip)
- Melt the chocolate, syrup and butter in a bowl using the double boiler method. Stir to combine these ingredients.
- Crumb the biscuits in a food processor before adding the hazelnuts and pulsing several times to chop them up roughly.
- Add the biscuit mixture to the chocolate mixture and stir well.
- Spoon into the cake tin and press to create a base for your cake.
- Chill in the fridge.
- Make the filling by melting the dark chocolate and milk chocolate along with the cream. Again, use the double boiler method. Stir until all melted and combined before allowing to cool slightly.
- Add the egg yolks to the melted chocolate and stir.
- In another bowl, beat the egg whites until they are thick. Add the sugar and beat until fluffy and stiff.
- Use a metal spoon to fold the fluffy egg white mixture into the chocolate and egg yolk mixture. Spoon this onto the cake base and refrigerate or 2 hours or more.
- When ready, run a heated cloth around the edge of the tin. This helps loosen the tart from the tin and makes it easier to remove.
- Transfer the cake onto a nice plate.
- Spoon the whipped cream onto the cake and sprinkle grated dark chocolate on top.
You can make a full, large cake or you can make several smaller cakes if you prefer. Smaller cakes are particularly convenient if you want to host a Valentine’s Day dinner and invite other couples to join you.
