Mushrooms are delicious and they offer great nutritional benefits too. If you love mushrooms and you are looking for a great way of serving them to your family or guests, here’s an easy mini tart recipe.
Ingredients:
- 375g puff pastry
- Flour (for dusting)
- 25g butter
- 300g wild mushrooms (cleaned and sliced)
- 25g parmesan (grated finely)
- Handful of parsley (chopped)
- 1 garlic clove (chopped finely)
- 1 egg
Method:
- Lightly dust a clean surface with flour.
- Roll out the pastry on this surface and cut 4 circles out (about 15cm wide).
- Place the circles of pastry on a lined baking tray and refrigerate.
- Preheat your oven to 200 C.
- Heat a frying pan and add the butter and mushrooms. Fry the mushrooms for 5 minutes or until there’s no liquid left in the pan. Season the cooked mushrooms and remove from heat.
- Mix the mushrooms with the parsley, parmesan, and garlic.
- Remove the pastry from the fridge and score a 1cm border of each tart. Spoon the mushrooms into each tart (in the middle of each one).
- Brush the beaten egg on the edges of each tart.
- Bake for 20 minutes or until golden and puffed up.
- Enjoy immediately.
This easy is so easy that you can really get creative! If you want to add meat, you can chop up some bacon and mix it with the mushrooms. Just make sure that you cook the bacon before mixing it with the cooked mushrooms. Adding a touch of garlic is important for enhancing the flavour of the mushrooms but, since you are only adding one clove, it will not be overpowering.
