When you buy fresh fruit or receive a delicious fruit basket, you might want to make the most of these delicious sweet treats by using them in various recipes. Fruit, on its own, is tasty. It’s even better when you give your favourite foods a dose of fruitiness.
You will need:

  • Fresh fruit of your choice
  • Tart shells

For the custard

  • 2 cups milk
  • 2 Tbsp cornstarch
  • 1/3 cup sugar
  • 2 eggs
  • 1 tsp vanilla

For the glaze

  • ¾ cup fruit juice
  • 1 Tbsp cornstarch
  • 3 Tbsp sugar
  • 1 ½ Tbsp crushed fruit
  • ½ tsp fruit flavouring

Method:

  • Start by making your custard. In a saucepan, mix all the dry ingredients before adding the milk, slowly.
  • Once completely blended, turn on the stove and heat the mixture slowly.
  • In the meantime, beat the eggs in a separate bowl.
  • Once you notice bubbles start to form around the edge of the saucepan, take a few tablespoons of the milk mixture and add them to the eggs.
  • Now slowly pour the eggs into the milk mixture while stiring.
  • Allow the mixture to boil and thicken on a low heat. Stir constantly to prevent the custard from sticking or burning.
  • Remove from heat, add the vanilla, and mix well.
  • While the custard cools, you can prepare your fruit. Make sure that your fresh fruit is washed and cut or sliced according to the size of the tart shells.
  • To make the glaze, mix the cornstarch and fruit juice in a microwave safe jug or bowl.
  • Add the sugar and crushed fruit to the mixture and microwave on high for 2 to 2 ½ minutes. Stop to stir at about the 1 minute mark.
  • If necessary, microwave for another minute or two – until the mixture thickens.
  • Add the fruit flavouring and allow to cool.
  • Once the custard has cooled to room temperature, place in the custard in the tart shells and top with fresh fruit.
  • Use a brush to coat the fruit with the fruit glaze for that perfect finishing touch and to hold everything together perfectly.
