If you are like many other people out there, you have made the common resolution to start a new diet as of the New Year. Just because you’re on a diet does not mean that you have to cut out the good stuff altogether! Here are some delicious biscuit recipes that you can enjoy without all that guilt.
Double chocolate cookies
Ingredients:

1 cup smooth peanut butter
-
2/3 cup coconut sugar
-
½ tsp vanilla extract
-
2 Tbsp cocoa powder (unsweetened)
-
Pinch of salt
-
1 tsp baking soda
-
1 egg
-
½ cup dark chocolate chips and extra for the topping
Instructions:

Preheat your oven to 350 degrees F.

Beat the peanut butter, sugar, and vanilla together in a medium bowl.

In a separate bowl, mix the cocoa powder, baking soda, and salt.
-
Beat the two mixtures together.
-
Beat in the egg and then stir in the chocolate chips.
-
Form dough balls and press 3 of 4 chocolate chips into the top if you wish.

Press the cookies down so that they aren’t too puffed up.
-
Bake for 6 to 8 minutes and watch carefully. The coconut sugar adds amazing flavour but your cookies can burn easily so it’s important to stay beside your oven while they bake.

Remove and allow to cool to room temperature before you serve. If you serve while hot, they will be really crumbly.
Oatmeal chocolate chip cookies

1 cup oats
-
¾ cup spooned and levelled whole wheat flour
-
1.5 tsp baking powder
-
1.5 tsp cinnamon
-
½ tsp salt
-
2 Tbsp butter (melted and cooled)
-
1 tsp vanilla
-
1 egg
-
½ cup honey
-
½ – ¾ cup dark chocolate chips (divided)
Instructions:

Preheat your oven to 325 degrees F.

Line a baking tray with parchment paper.

In one bowl whisk the oats, baking powder, flour, salt, and cinnamon together
-
Melt the butter in another bowl and allow to cool slightly before whisking in the vanilla, egg, and then the honey. Add and mix each ingredient one at a time.

Mix the wet ingredients with the dry ingredients and use a wooden spoon to blend the two. Don’t mix too much!

Set aside half of your chocolate chips and chop the other half up roughly with a knife. Fold the chopped chocolate into the dough.

Refrigerate for about 30 minutes.

Shape the dough into about 15 cookies with your hands.
-
Place the cookies on your baking tray. Each cookie should be 2 inches from the next.

Bake for 12 – 13 minutes or until you see the edges start to brown.

Remove from the oven and immediately press the chocolate chips into the tops of all your hot cookies.
-
Allow to cool on the pan before moving to a cooling rack.

Enjoy with plenty of milk!
Pumpkin chocolate chip cookies
Ingredients:

½ cup canned pumpkin (not pumpkin pie filling)
-
2 Tbsp honey
-
1 egg
-
½ tsp vanilla extract
-
2 Tbsp brown sugar
-
½ tsp cinnamon
-
½ tsp pumpkin pie spice
-
1 tsp baking soda
-
Pinch of salt
-
1 cup oat flour (oats that are blended)
-
½ cup dark chocolate chips
-
¼ cup chocolate chunks (optional)
Instructions:

Beat the pumpkin, honey, vanilla extract, and egg together in a bowl.

Beat in the sugar.
-
In another bowl, mix the cinnamon, baking soda, pumpkin pie spice, oat flour, and salt together.

If you don’t have oat flour, just blend regular rolled oats in your blender until you achieve the same consistency as flour.

Mix the wet and dry ingredients together and mix until combined. Be careful not to over mix.

Add the chocolate chips and mix.

Chill for 30 minutes while you preheat your oven to 350 degrees F.

Scoop the dough onto the lined baking tray.
-
Press the chocolate chunks into the cookies if you like.
-
Bake for 6 to 8 minutes.

These cookies are supposed to be soft and chewy.
