Many people think that being diabetic of cooking for a diabetic loved one means that you can’t enjoy anything sweet. This is so far from the truth! There are a great number of delicious diabetic-friendly recipes out there and they are also perfect for the warmer months of the year! This combination of chocolate and mint with the added bonus of zero baking time makes it perfect for summer and any time you’re in a hurry to whip up something exceptionally tasty!
Ingredients:
- 1 cup rolled oats
- ½ cup dark chocolate pieces
- 6 Tbsp butter (unsalted)
- 1 cup crushed chocolate wafers
- 1 Tbsp unsweetened cocoa powder
- 1 Tbsp milk (fat free)
- ¼ tsp salt
- ½ tsp shortening
- ¾ cup powdered sugar
- 2 oz cream cheese (reduced-fat variety)
- ½ tsp peppermint essence
- Fresh mint leaves to garnish if desired
Method:
- Coat your 8 x 8 x 2-inch baking pan with cooking spray and set it aside.
- Make the crust by placing your oats in a food processor and pulsing until they are finely ground. Remember, do not leave the food processor on for several seconds. Only turn it on and off for a second at a time so that the oats don’t get hot while you grind them.
- Combine ¼ cup of chocolate pieces and the butter in a medium saucepan and heat over a low heat. Stir regularly until all the chocolate and butter has melted. Add the ground oats, wafers (crushed), cocoa powder, fat-free milk, and salt.
- Once mixed, press the crust mixture into the pan and let it chill in the fridge for about 15 minutes.
- Use the same saucepan you used previously to heat the remaining ¼ cup of chocolate and the shortening. Remember to stir well and only use a low heat setting. Once everything has melted, set this chocolate mixture aside.
- Combine the sugar, cream cheese, and peppermint extract in a medium bowl. Stir them all together until well-blended and smooth. Spread this mixture over the chilled crust.
- On top, drizzle the melted chocolate and shortening mixture.
- Chill for about an hour (or until the drizzled chocolate has set).
- Sprinkle some fresh mint on top!
Remember, you can also make smaller portions of this dessert if you like and top each one with a sprig of mint! Also take note that the chocolate drizzled on top will set but the cream cheese layer will still be fairly soft. It’s also a good idea to ask your doctor before trying any sweet dishes – just to be on the safe side.
