Light desserts are always favoured in the warmer months. We tend to opt for fruity sweet treats rather than heavy caramel and chocolate dishes. We also usually eat considerably less during the summer than in the winter. This doesn’t only count when it comes to food but also desserts. This is exactly why bite size portions are so perfect. Whether you are hosting a fun family event or you just feel like using up some extra fruit at home, here’s how to make your own mini custard fruit tarts!
The first thing to remember is that the crust can be trick for many novice bakers as well as time consuming. This is why you might want to use ready made mini tart crusts instead of making it all from scratch. Making the filling and glazing the fruit is really easy to do and it won’t take nearly as long. This is handy when you have to prepare a large spread.
Ingredients:
- 2 ¾ cups milk
- 2/3 cup sugar
- ¼ cup cornstarch
- 4 egg yolks
- 2 tablespoons butter
- 1 teaspoon vanilla essence
- pinch of salt
- ¼ cup currant jelly/jam (for the glaze)
Method:
- Place the milk, sugar, cornstarch, salt, and egg yolks in the blender.
- Blend for approximately 5 minutes and then pour into a microwave-safe bowl.
- Microwave (on high) for 6 minutes. Remove after the first 3 minutes and whisk until smooth before placing back in the microwave for the following 3 minutes (stopping and whisking after each minute).
- Add the vanilla and butter and whisk until the mixture is smooth.
- Set out your ready made tart crusts out on a tray (or several trays if you’re making a larger quantity).
- Fill each of the tart crusts with the cream filling.
- Top off with your favourite fruit but remember to use small portions so that you don’t overdo it. If you use oranges or any kind of citrus fruit, make sure that you segment them in such a way that the membranes are removed. This makes them look better and they are easier to eat.
- Melt the currant jelly and brush it over the fruit. If some drips onto the cream filling, don’t worry about it.
- Make sure that you enjoy these the same day. Some might keep well in the fridge until the next day but it’s not recommended to keep them any longer since the fruit and cream will spoil. If you want to make it a bit more decadent, you can top them with some whipped cream too.
