In most cases, when you think about enjoying some biscuits, you automatically start thinking about all the sugar and calories. Fortunately, there are plenty of great healthy biscuit recipes that taste delicious and they won’t leave you feeling guilty. Here are a few recipes to try:
 
Ingredients:

  • ¼ cup margarine
  • ¼ cup creamy peanut butter (sugar-free)
  • ½ cup low calorie or calorie-free sugar substitute
  • ¼ cup sugar-free
  • 2 egg whites
  • 1 tsp vanilla extract
  • 1 ¾ cups flour (all-purpose)
  • 1 tsp baking soda
  • 1/8 tsp salt
  • ¾ cup strawberry spread (low-sugar variety)

Method:

  • Preheat your oven to 350 degrees
  • Beat together the margarine and peanut butter. Use your mixer on medium speed until it reaches a smooth, creamy texture.
  • Gradually add the sugar, sweetener, egg whites, and the vanilla. Make sure that you beat everything properly together.
  • In another bowl, combine the flour, salt, and soda.
  • Gradually add the dry ingredients to your margarine mixture and beat well during this step.
  • Shape your dough into about 40 balls, place them on baking sheets. Make sure that your baking sheets are coated with cooking spray.
  • Bake for 8 minutes or until they start to brown.
  • Allow them to cool slightly on the pans before placing them on cooling racks.
  • Spread some strawberry spread on half of the cookies and stick the other half on top to create a kind of cookie sandwich.

 
Banana, oatmeal, and chocolate cookies
Ingredients:

  • 1 cup oat flour
  • ¾ cup rolled oats
  • ½ tsp baking powder
  • 1/3 tsp baking soda
  • ½ tsp salt
  • ½ cup sugar
  • 1/3 cup oil
  • 1/3 cup soy milk
  • ½ tsp vanilla essence
  • ½ a ripe banana (cut into small chunks)
  • ¼ cup chopped nuts (walnuts are great)
  • 1/3 cup choc chips (semisweet)

Method:

  • Preheat your oven to 350 degrees
  • Combine the top 6 ingredients in the list above in a bowl.
  • Whisk the oil, milk, and vanilla together in another bowl.
  • Add the wet ingredients to the dry mixture and stir.
  • Fold in the banana, walnuts and choc chips.
  • Use parchment paper to line a baking sheet.
  • Use an ice-cream scoop to make small dough balls and place them on the baking sheet.
  • Bake for 25 minutes or until browned.
  • Allow to cool on a wire rack.

 
Coffee cookies
Ingredients:

  • 2 Tbsp butter
  • 2 ounces semisweet chocolate
  • 1 egg
  • 1 tsp instant espresso powder
  • ¼ cup sugar
  • 2 Tbsp flour
  • 1/8 tsp baking powder
  • ¼ tsp salt
  • 2 ounces semisweet chocolate

Method:

  • Melt the butter and 2 ounces chocolate in the microwave.
  • Put the egg, espresso powder, and sugar in a bowl and whisk until light.
  • Combine the melted chocolate and the eff mixture.
  • Sift the flour, baking powder, and salt.
  • Add the dry ingredients to the chocolate mixture and stir well.
  • Chop the other 2 ounces of chocolate and add to the bowl. Mix well.
  • Allow to chill in the fridge for about 15 minutes.
  • Make a log (about 6 inches long) and then place in the freezer for at least 3 hours.
  • Preheat your oven to 325 degrees.
  • Slice the log into slices (½ inch thick each) and place them on a baking sheet
  • Bake for 12 minutes.
  • Cool on a wire rack.
